Ingredients:

  • 4 tangerines, clementines, or oranges
  • 1 head garlic, halved
  • 1 red Thai bird chili, chopped (optional)
  • 4 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 1 tablespoon whole black peppercorns
  • Extra-virgin olive oil
  • 1 (12 to 14 pound) free-range, organic turkey
  • Kosher salt and freshly ground black pepper

Instructions:

  1. Preparing the Marinade:

    • In a bowl, combine the tangerines (or clementines/oranges), halved garlic, chopped red Thai bird chili (if using), fresh rosemary, thyme sprigs, and whole black peppercorns.
    • Pour a generous amount of extra-virgin olive oil over the ingredients.
    • Using your hands, squeeze and blend all the flavors together, ensuring the marinade is well combined.

  2. Marinating the Turkey:

    • Cut the turkey into 4 pieces and remove the bones from the breast. (You can request the assistance of your local meat market for this step.)
    • Place the turkey pieces on a large platter or in jumbo Zip Bags.
    • Pour the marinade over the turkey, making sure all pieces are well coated. Alternatively, you can place the turkey and marinade in the Zip Bags, ensuring the turkey is evenly coated.
    • Refrigerate the turkey for at least 2 hours or overnight, turning the bird over in the marinade a few times to ensure even distribution of flavors.

  3. Preparing the Grill:

    • Approximately 30 minutes before grilling, remove the turkey from the refrigerator to allow it to come to room temperature.
    • Preheat the grill to medium heat (around 350°F or 175°C).
    • Wipe the grill grate with some oil to prevent sticking.

  4. Grilling the Turkey:

    • Remove the turkey from the marinade and wipe off any excess.
